Analysis of Magnesium and Sodium Levels in Durian Seeds from Parigi Moutong Regency, Central Sulawesi

Durian seeds are rich in minerals, especially magnesium and sodium minerals. This study aims to determine the levels of magnesium and sodium contained in durian seeds. Determination of magnesium and sodium levels using atomic absorption spectrophotometer (AAS). Magnesium levels were analyzed at a wavelength of 285.2 nm and sodium at a wavelength of 589 nm. Before determining the levels of magnesium and sodium, first determine the water content and ash content in the sample. The results showed that the analysis of the water content in the sample obtained 7.519% and ash content of 16.845%. Furthermore, the analysis of magnesium levels obtained an average result of 7.315 mg/Kg and sodium levels of 4.249 mg/Kg.
